From my Lovin’ Oven! You can trust this recipe-I’ve developed/tested/tasted it for over a year.

Preheat Oven to 350 F. Convection.

Dry Ingredients

2C   Gluten free flour (I prefer Namaste brand)

1/2C   Coconut shredded Sugar Free

1/4C   Ground Flax seed (freshly ground)

1/4C   Poppy Seeds

2 tsp    Baking Soda

1/4 tsp Sea Salt

2 tsp    Cinnamon

1/2 tsp Fenugreek

Wet Ingredients**Room temperature

4 Whipped Whole Eggs**

6 Large Ripe Bananas

3/4 C Raw Cane Sugar

1 tsp Vanilla Extract

1/2 C Coconut Oil (**warmed)

1/2 C Applesauce**-Sugar Free

1 Short shot Expresso**
1 1/2C Walnuts

1/2C  Dark Chocolate chips
In a large bowl mix dry ingredients with a large fork. In another large bowl- whip **eggs, add bananas and mash until liquid. Add the rest of wet ingredients. (**ROOM TEMPERATURE SO coconut oil will NOT solidify). I use a large whip. Add dry and wet together and then add walnuts and chocolate chips.
Coat 2 —8X14 Bread Pans with coconut oil. Fill pans 1/2 way with batter. Let rest for 3 minutes. Bake @ 350 F. Convection for 40 minutes. Test with toothpick-poked in middle comes out dry. NON-convection oven- I suggest 375 F. for 40 ish minutes. Test with toothpick.
***Let cool in pans for 7 minutes. When cooled to room temperature, the banana bread will be sweeter in taste.
FOR PUMPKIN BREAD:  Can substitute 2 Cups Pumpkin for Bananas. Add Nutmeg, Allspice, Clove spices and 1/2 tsp Fenugreek. I don’t add poppy seeds to pumpkin recipe.

words fall like rain

words fall like rain leaving puddles of ink on my page

tears and heart jpgunshielded, droplets swell drinking warm wet salt

liquid pearls cling down my cheeks and drip off my chin

splashing tears that dash and dart pushing the edges of my pen

random alphabet grow disfigured on white paper turning grey

seduction and avoidance play along lined paper

a solo drop quivers isolated

vulnerable and exposed another flood of tears are wrenched free

salty droplets ride piggyback like caffeinated monkeys on ripe banana trees

images-5clumped letters stretch across grey soggy paper

heavily soaked with emotional weight

meaning evaporates leaving behind streaks of salt

stiff thin white paper softens into wavy fabric

I sit at my desk and stare out the window.

images-2It’s raining outside.

It’s raining inside too.
